where it all began

It all began in the vineyards of the Puiatti estate: 50 hectares in the gravelly, cool foothill area of Isonzo, that hosts the most typical and autochthonous varieties that yield refined, elegant wines with great structure, together with international grape varieties offering great richness of flavor and minerality.

The pedoclimatic characteristics of these territories make them particularly suitable for producing great grapes and great wines, especially whites.

This is a gift of nature that deserves to be conserved through the promotion of practices that Puiatti has used for years: integrated crop protection (organic fertilizers, moderate irrigation, mating disruption) and biodiversity recovery programs. 

Crushing

Once the work in the vineyard is complete, the juice is extracted from the pulp of the fruit through soft crushing at just 0.2 atmospheres. This is the equivalent of the pressure applied by human feet, a carryover from ancient traditions.

The must does not stay in contact with the skins; the finished wines are separated from the lees and malolactic fermentation of the white grapes is prevented.

As always, Puiatti wines strictly ferment and mature without any contact with wood. The wines preserve the correct alcoholic content of the non-overripe fruit, so that they may express its genuine characteristics. The must is removed from the lees at low temperature. All processes take place in temperature-controlled steel vats.

Maturation

Taking place exclusively in steel, maturation occurs through various methods according to the nature and vintage of the wine.

The most important wines complete their long evolution enclosed in the glass of the bottles, thus reaching full expression of their natural characteristics. Any contribution, additive or agent external to its nature is strictly prohibited in maturation. Its color is its own and is both expression and proof of its authenticity, its true nature. Maturing without aging.

A bold choice often challenged by the prevailing opinion, a philosophy that, today, is al the Puiatti wines reaping the rewards.

Sparkling Wine

The sparkling wines production process is the logical consequence of an ardent search for the essence os a grape variety. It is through the making of the wine that the quest for separate vinification ends, as the technical ability of man leads to a rebirth of the wine, buoying it upwards, freeing it and rendering it light.

The territory, cool climate, difference in day and nighttime temperatures and soil rich in minerals, together with the particular ecological requirements of the grape varieties are the other reasons that brought Puiatti to take up this vocation. For years now, Puiatti has explored and produced new versions of authochtonous and traditional grape varieties, exclusively using the classic method.

The sparkling wines are the noble expression of Puiatti's philosophy.
